1 large onion, sliced in long thin strips
1 T. olive oil
1 T. butter
Heat a large skillet over medium high heat. Add the olive oil and butter. When the butter is melted, swirl the pan to combine the olive oil and butter.
Add the sliced onions to the pan and give them a stir to evenly coat the onion strips.
Continue to cook, keeping an eye on them to make sure they don't burn. The whole process takes about 30 minutes. The key is to not stir too often as the onions need contact with the surface of the pan to achieve the caramelization process. When you do stir, give the pan a shake to redistribute the onions across the surface of the pan. Here's some photos taken throughout the caramelization process.

At this point you can remove from heat and sprinkle in any herbs or spices you want. Use as desired or store in an airtight container in the fridge. Add to sandwiches or entrees as a flavor booster. Caramelized onions are both sweet and savory.
